Cake Angels

Cake Angels is the brain child of Julia Thomas who, when diagnosed with breast cancer while expecting her first child, took herself first off dairy products and then, off gluten and wheat for good measure. As an enthusiastic baker, she then set her mind to creating the tastiest and prettiest gluten, wheat and dairy-free cakes that culinary wit could devise. And, as you can see, they are certainly pretty. And we can vouch for the fact that they taste as good as they look.
The cup cakes that we tried were the vanilla (for which Julia creates that amazing pink frosting with coconut oil, rice milk and strawberry jam), the peanut butter(an amazingly peanutty but not overpowering peanut flavour – if that is not a contradiction in terms) and the red velvet cupcakes which look lovely and taste great although we were sorry to see that Julia was using cochineal (a 'red' for 'to be avoided' colouring in our book) to get the lovely red colour. We wondered whether beetroot colouring would work as well.
She uses a mixture of rice, potato, maize, tapioca and buckwheat flour in all to achieve an excellent light sponge texture and an array of non-dairy ingredients such as coconut oil, rice milk and flour, icing sugar and cocoa butter to create her frostings and icings.
Apart from the cupcakes, Julia also sent us her brownies and Date and walnut tray bakes - see below.
For those who like really rich, gooey chocolate brownies, these are to die for – dark and yummy, although it would be a brave man who could munch his way through a whole brownie!
The date and walnut tray bakes were also delicious - a nice light but dark flavoured sponge with lots of nuts with a stickly toffee topping, which some of us felt make the cake rather too sweet.
A box selection of 12 cupcakes costs £30 including mainland delivery.
