Mamma Cucina gluten and dairy-free cheesecakes

A dairy and gluten-free cheesecake may seem somewhat of a contradiction in terms – although a very welcome one if you are on a gluten and dairy-free diet! But if you use a gluten-free sponge/biscuit base and a soya cream cheese for the topping, you can get there.
The resulting cheesecake is surprisingly successful – very creamy and smooth. A little more Angel Delight-ey than double cream-ey but certainly neither beany or soya-ey.
The base has a soft cookie consistency and is very
agreeable. The strawberry topping has a fresh strawberry flavour, the mango and passion fruit does taste of mango, although not quite so distinctively – but the combination is still very enjoyable.
The cheesecakes come frozen so you can cut slices out
as you need rather than defrosting the whole thing.
