Courgette Brownies

Corn, gluten, lactose, milk, nightshade, peanut, sesame, soya & wheat free; can be nut free

Don't worry, the courgettes in these moist chocolatey brownies disappear once they are cooked.

Ingredients

  • 125g courgette, finely grated
  • 80g coconut oil, melted
  • 20g vegetable oil
  • 1 egg
  • 160g xylitol or brown sugar
  • 1 tbsp vanilla extract
  • 45g gluten free flour (I used cassava)
  • 30g cocoa powder
  • 1 tsp gluten free baking powder
  • pinch of salt
  • 30g walnuts (optional)
  • 60g dairy free chocolate

Method

  1. Preheat the oven to 180C.
  2. Grease and line an 18cm tin.
  3. In a large bowl mix the courgette, oils and egg together.
  4. Stir in the flour, cocoa powder, baking powder and salt until combined.
  5. Roughly chop the walnuts and chocolate.
  6. Stir the walnuts and half the chocolate into the mix.
  7. Pour the mixture into the prepared tin and spread it evenly.
  8. Sprinkle the rest of the chocolate over the top.
  9. Bake for 30 minutes and leave to cool before cutting into squares.
  10. Store any not eaten straight away in an airtight container.
