Pear and Walnut Brownies

Corn, gluten, lactose, milk, nightshade, peanut, sesame, soya & wheat free

The crunch of the nuts and the moist sweetness of the pear work well with the rich dark chocolate flavour of these brownies.

Ingredients

  • 125g dairy free spread
  • 100g dairy free chocolate
  • 125g caster sugar
  • 2 eggs
  • 85g gluten free self raising flour
  • 2 tbsp cocoa powder
  • 1 ripe pear, peeled and cut into small chunks.
  • 50g chopped walnuts

Method

  1. Preheat the oven to 180ºC / 160ºC fan / Gas mark 4.
  2. Line a 20cm x 20cm tin with baking paper.
  3. Snap the chocolate into pieces and melt gently with the dairy free spread either in a microwave or in a heatproof bowl over a pan of boiling water.
  4. Beat the eggs and sugar together until pale and creamy.
  5. Pour the melted chocolate mixture into the egg mix and whisk until combined.
  6. Sift the flour and cocoa powder into the mix and stir thoroughly.
  7. Fold through the pear and walnuts until well distributed.
  8. Pour into the prepared tin and cook for 20 - 25 minutes.
  9. Don't wait until a skewer comes out clean as the brownie will be over cooked.
  10. Leave to cool in the tin and cut into slices.
