Carrot Halwa

Corn, egg, gluten, lactose, milk, nightshade, sesame, soya & wheat free; can be nut free

This is an Indian dessert that would be made with ghee (clarified butter) and cows milk but I have replaced both of these with coconut alternatives. I have also reduced the sugar as I found the original over sweet. Halwa is served on it's own but would be nice with some dairy free ice cream or yogurt.

  • 500g carrots, peeled and grated.
  • 500ml dairy free milk (I used unsweetened coconut)
  • 4 cardamom pods, seeds removed and ground
  • 1 tbsp dairy free spread (I used coconut oil)
  • handful of nuts, toasted and chopped

Method

  1. Bring the milk to boil in a medium saucepan.
  2. Stir in the carrots and keep cooking over a medium heat until the milk has evaporated.
  3. This takes quite a while but you don't have to stand over it, just check up every now and then.
  4. Add the sugar and cardamom to the carrot and keep cooking until the sugar has dissolved.
  5. Stir through the dairy free spread and serve warm or chilled topped with the nuts.
