Michelle'sFreeFrom Cauliflower with Mange Tout (Snow Peas)
Wheat, gluten, corn, soya, egg, nightshade, dairy free; can be nut free

This can be used as a hot vegetable (with something like the beef casserole on the previous page) or at room temperature as a salad on its own. The addition of the nuts means that it is filling and nutritious. If you want to make it nut free, substitute roasted pumpkin seeds for the cashews.

2 small heads cauliflower
150g / 5oz mange tout (snow peas)
150g / 5oz roasted, salted cashew nuts or roasted pumpkin seeds
freshly ground black pepper
juice 1-2 lemons

Break the cauliflower into small florets and steam for 5-10 minutes (depending on the size of your florets) or until it is partially cooked but still has some crunch.
Meanwhile, top, tail and halve the mange tout (snow peas) and steam separately for around 5 minutes. They too should be partially cooked but retain some crunch.
Mix both in a bowl and add the cashew nuts, lots of freshly ground black pepper and the lemon juice.
Mix well and serve hot, warm or at room temperature.
