Marshmallow Penguins

Egg, gluten, lactose, milk, nightshade, nut, peanut, sesame & wheat free

  • Giant mashmallows
  • 100g dairy free chocolate
  • Dairy free small chocolate drops
  • Jelly beans or freefrom chocolate beans
  • Optional: orange icing for feet

Method

  1. Gently melt the chocolate in a bowl over a saucepan of simmering water and then remove from the heat.
  2. Line a tray that fits in the fridge with baking paper.
  3. Skewer a giant mashmallow on the bottom and coat the top, sides and back in chocolate.
  4. I found a mixture of dipping and spreading with a knife worked the best.
  5. Place the coated mashmallows on the tray and then put in the fridge to set.
  6. Once they have set, remelt any remaining chocolate to use as glue and stick in the chocolate drops for eyes.
  7. Snip a cross with scissors and then press a jelly bean or chocolate bean firmly in as a beak, using a dab of the melted chocolate as glue.
  8. Roll out the icing and cut out triangles for feet.
  9. Wet the icing where you want it to stick and place underneath the penguin.
  10. Chill to set.
