Michelle's Freefrom Hemp Corkscrews with Salami
Dairy, corn, soya, egg & nut free

The spelt and hemp pasta has a lovely nutty texture and flavour. You need to check the salami ingredients carefully as although some salamis are gluten and dairy free, some include lactose or modified starch. You could substitute ham, chicken or smoked fish for the salami. To make the dish nightshade-free, substitute extra spring onions (scallions) for the tomatoes. The pasta works equally well warm or at room temperature as a salad.

250g / 9oz Yorkshire Hemp spelt and hemp pasta
4-5 tbsp olive oil
2-3 tbsp balsamic vinegar
sea salt and freshly ground black pepper
50g / 2oz sliced salami (check ingredients)
6 large spring onions (scallions), trimmed and sliced thinly
50g / 2oz mini tomatoes, quartered
a little chopped parsley


Cook the pasta in plenty of fast boiling water for 6-8 minutes until cooked but still al dente. Drain, turn into a salad bowl, add the olive oil, the vinegar, salt and pepper and toss well.
Add the salami, spring onions and tomatoes and mix well. Adjust seasoning to taste. Sprinkle with a little parsley before serving, warm or at room temperature.
