Smoothie Pancakes

Corn, gluten, lactose, milk, nightshade, nut, peanut, sesame, soya & wheat free

I used a ready made pomegranate and berry smoothie but you can of course make your own puree from any fruit combination you like.

  • 150g gluten free flour
  • 2 tsp gluten free baking powder
  • 1 tbsp caster sugar
  • Pinch of salt
  • 250ml smoothie
  • 2 tsp vegetable oil + some to grease the pan
  • 1 egg

Method

  1. Put all the dry ingredients into a bowl and stir together.
  2. Add the smoothie, oil and egg and whisk until smooth.
  3. Heat a large frying pan and coat with a little oil.
  4. Ladle small puddles of the mix into the pan, 2 or 3 at a time.
  5. When the pancake stops bubbling, gently turn and brown the other side.
  6. Serve with whatever ice cream or yogurt you can eat, fruit, nuts, chocolate sauce etc.
