Michelle'sFreeFrom Fresh Cherry Tomato Sauce
Wheat, gluten, egg, corn, soya & nut free; can be dairy free

A simple, fresh tomato sauce to be used with pasta or the gnocchi on page 29.

4 tbsp olive oil
2 small onions, peeled and finely chopped
1 large head fennel, chopped small
4 heaped tsp dried oregano
1.2kg / 2lb 10oz fresh cherry tomatoes, quartered
11/2 glass dry white wine
sea salt and freshly ground black pepper
fresh grated parmesan (optional)

Heat the oil in heavy saucepan and gently fry the onions, fennel and oregano for 10 minutes or until well softened.
Add the tomatoes and wine, bring to the boil, cover and
reduce the heat to a simmer. Simmer for 25-30 minutes or until the tomatoes are totally broken down and the fennel quite soft.

If you like your sauce bitty, just season to taste and serve immediately with the gnocchi or pasta of your choice.
If you prefer your sauce smoother, purée in a food processor and then season to taste.
Reheat and serve with pasta or gnocchi.
