Delamere Dairy Mushroom Soup

Preparation Time: 10 minutes
Cooking Time: 40 minutes
Serves: 6-8

Ingredients: 25g Delamere Dairy’s Goat butter
1 White Onion, finely chopped
800g Flat brown Mushrooms, roughly diced
2 Garlic cloves, chopped
900ml Litre Vegetable stock.
200ml Delamere Dairy Full Goats milk
Salt and Pepper
Method:
1. Melt the butter and sweat the onion for 15 minutes. Add the garlic and fry for 30 seconds. Add mushrooms and fry for 5 minutes.
2. Add the stock and bring to the boil, simmer until the mushrooms are soft.
3. Blend the soup until smooth then return to a very low heat and add the Delamere Dairy Goats milk. Season to taste and heat until piping hot but not boiling. Serve with crusty bread



Ciabatta with goat's cheese and onion marmalade


Preparation Time: 10 minutes
Cooking Time: 20 minutes

Serves: 4-5

Ingredients: 1 half baked Ciabatta
100g Delamere Dairy Spreadable Goats cheese
2 Onions (red or white) finely sliced
2 Garlic cloves, crushed and chopped
60ml Olive Oil
30ml Balsamic vinegar
30g Sugar
Method:
1. Preheat the oven to 200°c. Cut the half baked Ciabatta into 2cm thick diagonal slices.
2. Crush the Garlic Cloves and lightly chop then place into a bowl along with the olive oil and mix together. Seasoning and herbs can be added if desired. Place the Ciabatta slices on a baking tray and brush with garlic oil, leaving two tablespoons of oil in the bowl. Bake the bread for 10 minutes.
3. Put the remaining garlic oil in a frying pan and heat on the hob, add the onions. Cook for 10 minutes until soft, constantly stirring to avoid burning.
4. Add the balsamic vinegar and sugar to the onions and continue to fry for 5 minutes, seasoning to taste.
5. Spoon a large teaspoon of Delamere Dairy Spreadable Goats cheese onto each ciabatta slice and heat under a grill for 3 minutes
6. Finally place a large spoonful of the onion marmalade onto each piece of ciabatta, garnish and serve.



Goat's cheese and spinach omelette


Preparation Time: 5 minutes
Cooking Time: 5- 10 minutes

Ingredients: 1 Knob of Delamere Dairy Goats butter
100g Delamere Dairy’s Medium Goats cheese
2 eggs
Handful of Spinach chopped
¼ Red Onion finely sliced
2 Slices of ham, bacon or prosciutto cut or torn up
Method:
1. Begin by placing a knob of Delamere Dairy Goats butter in a pan and frying off the red onions and ham.
2. In the meantime break the eggs into a small bowl, season and beat until smooth.
3. Add the chopped spinach into the pan and fry for a minute before tipping in the egg mixture. Lower the hob to a gentle heat after a minute then add the broken up Delamere Dairy Medium Goats Cheese. Continue to cook until firm, then grill if desired to brown the cheese.
4. Serve with crusty toast or a small salad.



Chicken Korma

Preparation Time: 15 minutes
Cooking Time: 40 minutes

Serves: 8

Ingredients: 1 large knob of Delamere Dairy Goats butter
4 Chicken breasts, diced into 1-2cm thick pieces
2 tsp curry powder
1 tsp turmeric
1 tsp garam massalla
3 cloves garlic, chopped
2 inches root ginger, grated
½ onion, finely chopped
200ml Delamere Dairy’s Goats milk
200ml Coconut milk
4 tbsp Delamere Dairy’s Goats yogurt
3 egg yolks
3 tbsp mango chutney
Knob of Delamere Dairy’s Goats butter
Diced peppers are optional.
Method:
1. Make a paste by combining the powdered spices with 2tbsps (approx) of water.
2. Fry the onion for 10-15 minutes until soft in a knob of Delamere Dairy Goats butter. Then add the garlic and ginger frying for a further 20 seconds, then Add the curry paste and fry for 30 seconds.
3. Add the chicken pieces and peppers (optional) and fry until the chicken is well sealed.
4. Roughly mix the coconut milk, Delamere Dairy goats’ milk and yogurt, mango chutney and egg yolks together in a bowl. Pour over the chicken and simmer for 20 minutes stirring occasionally.
5. This incredibly tasty dish works well with plain pilau rice and naan breads to extenuate its flavours.

Delamere Dairy white chocolate banana cake

Preparation Time: 15 Minutes
Cooking Time: 30 Minutes

Serves: 8 people

Ingredients: 2 Bananas (thickly sliced)
90g White Cooking Chocolate
225g White Self Raising Flour
1 Pinch Salt
140g Caster Sugar
55g Delamere Dairy’s Goats Butter
3 Eggs
60 ml Delamere Dairy’s Goats Milk
Method:
1. Preheat the oven to 190°c
2. Place the Goats Butter and caster sugar into a mixing bowl and cream together. Gradually beat the eggs into the mixture, and then add the Goats milk.
3.Sift the flour, gradually folding it into the cake mixture. Once relatively smooth add the pinch of salt, then gently fold in the broken up chocolate and the sliced bananas.
4. Turn the mixture into a greased and floured loaf tin or cake tin (23cm/9” diameter) and bake for 25-30 minutes or until golden and springy to touch.
